Serenissima Ristorazione and Serena's recipes: the spinach omelette

The column "Serena's recipes" is back today, in which Very serene restaurant offers some quick and practical culinary suggestions, not before having involved their nutritionists to ensure that the recipes are also nutritionally balanced. This week we propose the tasty spinach omelette, ready in 20 minutes. Here are the ingredients to use for 4 people:

  • 600 gr of spinach
  • 4 eggs
  • 50 gr of Parmesan cheese
  • 1 clove of garlic
  • White wine vinegar to taste
  • EVO oil to taste
  • Salt and Pepper To Taste

And here are the instructions for the preparation: first, wash the spinach for a long time and boil it. Drain, squeeze and mince them with a mezzaluna knife, then put them in a pan with a drizzle of extra virgin olive oil and a clove of garlic. Beat the eggs in a bowl with salt, pepper and a handful of grated Parmesan and then add them to the spinach. Heat a pan containing the oil, pour the contents of the bowl and cook over moderate heat. Turn the omelette upside down with the help of the lid and continue cooking for a few minutes. Finally, serve it after having dressed it with a drop of vinegar.
