In order to meet the highest food safety standards and offer a quality product that provides a wide dietary range, Serenissima Ristorazione, where required, has adopted the “Cook-Chill” controlled system for producing meals. This is an avant-garde method used for preparing, preserving and distributing food. Compared to the “traditional” cook-and-serve method, the C&C method has the advantage of minimising microbiological risk and allowing for a wider qualitative and quantitative dietary range. C&C has a modular organisation, divided into production, preservation, distribution and consumption. This ensures the best possible preparation of the meals from a nutritional, organoleptic, microbiological and organisational standpoint. The first and fundamental pre-requisite is the absolute quality and freshness of the ingredients. The meals leave the cooking facility packaged in individual or multi-portion containers. They are placed on special carts and kept at a specific temperature until delivered to the end user. This is an innovative technique that the Group is able to manage thanks to its efficient internal organisation and the support of its avant-garde cooking facilities.
Serenissima Ristorazione invests in making its food services ever more innovative and sustainable. One of the company’s main investments involves the expansion of its cook-chill facility in Boara Pisani, Padua. A new production and logistics area (white room) has been designed with innovative equipment and avant-garde technology to meet the highest food safety standards together with a quality product that provides a wide dietary range. €30 million, 12,000 square meters, and more than 300 workers: these are the figures relating to this food preparation centre, which is one of the most modern and technologically advanced in Europe.
A fundamental service for newborns and premature infants, the Lactarium provides key support to all neonatal units. Human breast milk remains the most nutritious and complete food for newborns, which is why Serenissima Ristorazione has created the first human milk bank – BLUD (Servizio Banca del Latte Umano Donato) – a public/private centre at Azienda Ospedaliera di Padova.
The centre is responsible for selecting, collecting, checking, treating, preserving and distributing human breast milk, which is donated and then processed, preserved, pasteurised and packaged as fresh or frozen, depending on the medical prescription. The Group’s service has earned ISO 9001:15, UNI 10854:99 and ISO 22000:05 certifications.
In 1998, Serenissima Ristorazione was the first food service company to take over the preparation of nutritional blends for enteral feeding at Azienda Ospedaliera di Padova. Enteral feeding (or tube feeding) is used for conditions that preclude ingesting food by swallowing.
The enteral blends are specifically formulated by the Dietician Services of Azienda Ospedaliera di Padova and are prepared in accordance with strict protocols. For this work, the Group has also earned UNI EN ISO 9001:15, 22000:05 and UNI 10854:99 certifications.
In recent years, Serenissima Ristorazione has successfully completed numerous projects funded through Project Financing to provide non-healthcare services in hospital facilities.
